There is no easy way to configure moodle to disable transformation of some kind of characteres become emotions.
My suggestion is offer a filter to text transformations, to avoid typos and etc.

Hi, this has been resolved by MDL-10915 in 1.9+

You can now remove all the emoticons using the setting in Admin > Apperance > Htmleditor > emotiocns
