If a teacher creates a new assignment by using the "Offline Activity" under "Assignments" in the editing mode, there is no option for setting the category of this new assignment! This is quite remarkable. Instead the teacher has to finish creating the assignment and then go to the "Set Categories" tab to change the category from "uncategorized."

In contrast, the "Manage graded event" tab does allow for the selection of the category.
