Description
I would like to see the ability give modules Due Dates, and then send a reminder email to the users who have not completed the task if there is say a week until the due date and follow up emails until they have completed it.
Is this possible?

This is really a duplicate of the old tracker issue MDL-245 - please vote there 
Moodle 2.0 allows due dates in all modules that allow conditional acitivites/activity locking, but no reminder e-mails are currently sent

Reasonable idea.
The completion tracking functionality that will be new in Moodle 2.0 will let you track some of this stuff better. See http://docs.moodle.org/en/Conditional_activities#Enabling_the_use_of_completion_tracking, but is not exactly what you are asking for.
