I would like to see the ability give modules Due Dates, and then send a reminder email to the users who have not completed the task if there is say a week until the due date and follow up emails until they have completed it.
Is this possible?

The completion tracking functionality that will be new in Moodle 2.0 will let you track some of this stuff better. See http://docs.moodle.org/en/Conditional_activities#Enabling_the_use_of_completion_tracking
, but is not exactly what you are asking for.
