We use Course Date Manager for this purpose. It can be found in Modules and Plugins: http://moodle.org/mod/data/view.php?d=13&rid=1208&filter=1
It does not work only with quizzes but with all other activities as well. It would be great if something like it could be in core.

It would be nice if this feature is present in core as well. An option to do this would be providing an adjust deadline button in the calendar next to 'new event' button. On clicking this, a drop down populated with all quizzes is displayed and facility for viewing current dates and extending them is provided. Please check the attached files for the changes. These files are to be included in the calendar folder. Please review to see if the patch meets the requirements.

Actually, we coded a plugin that meets this requirement at the OU, but we did not need to alter any core code to do it. We did it as a report plug-in. We have not released this plug-in to the community yet, but we probably could if anyone was interested. Our plugin does not just work for quizzes. It works for all activities in the course.

Tim: we've actually had a faculty member ask for this very capability. We'd love to have a look at this.

You can thank Eric Merill for the fact we shared that. He asked me at the Helena Moot.

As stated above, there is an add-on for this. I think that is a reasonable way to handle this. I am not sure it is right to add this to Moodle core.
