The teacher can grade the assignment (within the assignment) and provide feedback.

The teacher can then go to the gradebook, turn editing on, select the edit grade/cog icon and alter the feedback for the student. This does not cause the grade to be marked as overridden

If you turn quick feedback on and alter the feedback the grade is marked as overridden.

They should both work the same.
