Bump Travis and GHA to use php81 instead of php80

    Description

      Important note: This only can be integrated once we are green in the Epic runs.

      Move master (4.1dev), travis and gha integrations from php80 to php81.

      Just that. Easier to do than to achieve green status. Special note to the lack of XMLRPC in default images that can be a problem (we have it fixed in our php81 images but neither travis or gha use them, aka more skipped).
