At least since Moodle 3.11, the Moodle Quiz component clearly informs the teacher opening the Quiz page that overrides for groups and/or users have been set. The number of overrides is given, as well as the link to the page where they can be reviewed.

Assignment needs this feature as well. As a teacher after opening an Assignment I want to be quickly reminded of any overrides that have been added to it, and directed via link to the pertinent User Overrides / Group overrides page.

It is NOT sufficient for the teacher to have to discern overrides from the View submissions page - where columns "Allow submissions from", "Due date" and "Cut off date" appear only if any overrides are added to the Assignment. Overridden dates are not marked there in any way and are mixed together with the default dates.
