Cover php72 in the CI servers

    Description

      With MDL-60611 (and its epic), practically finished we should be able to make some of the tests/jobs to be run against php72. This will guarantee both that Moodle works ok with it and our tools (local_codechecker, local_moodlecheck, local_ci...) too.
